Lazy Healthy Peanut butter cookie

Hey guys
I'm so tired. School needs to be done. Which is why people like you and me ain't got time to cook. We still gotta eat though right ?

Here's a recipe I got off ohladycakes.com

Apparently these are good for you.

They are vegan (I don't care about this at all)

They are gluten free ( I care about this a little because I know a lot of people who can't do gluten)

Here's what you'll need:
  • 2 cups rolled oats
  • Pinch of fine sea salt
  • 1/2 cup natural peanut butter
  • 6 tbsp nut milk
Here's what you gotta do :

1. In a food processor fitted with the S blade, blend the oats and sea salt into a fine meal.
2. Add peanut butter; blend for 30-45 seconds.
3. Add the nut milk and pulse just until combined.
4. Using a small cookie scoop, drop the dough onto a flat surface lined with parchment paper.
5.  Press a fork into the tops, then freeze for 15 minutes to set.
6. Refrigerate in an air tight container for up to two weeks. Cookies will keep in freezer for months.
7. Enjoy!

Lazy Bruschetta Flatbread

Hello there,

Bruschetta sounds fancy as shit, I know. But I promise it's easy.

Impress your friends or guest with this simply delicious recipe. I like to make this as an appetizer or a late night snack. There's a variety of different ways you can make this based on the ingredients you choose to add.

The following recipe is how I like to make it, feel free to use different bread, cheese and or veggies toppings as well as dressing.

Do know that all my portions are estimates as I just blindly pour/sprinkle whatever I want on top

Here's what you'll need:

  • 1 Slice of naan or flatbread (I use whole Wheat)
  • 3 Tbls of olive oil
  • 1/3 cup of cheese (I used goat cheese but feta and mozzarella would be really good too)
  • Vegetables! – Whichever ones you like. ( I like tomatoes, olives, red onion, spinach)
  • Balsamic vinegar (or whatever dressing you want for the bruschetta)
  • A Pinch of Salt & Pepper

Here's what you gotta do:
1. Heat a pan on low heat and add Olive oil
2.  Make the bruschetta. Cut tomato and red onion into really tiny squares. add mix with balsamic vinegar and add in salt & pepper.
3. Add naan or flatbread to pan, let cook for 2 minutes or until lightly brown the turn over
4. Add bruschetta, cheese with veggie toppings and sprinkle some more salt and pepper or any other sauce you would like.
5. Heat for another minute or two
6. Slice & Enjoy
Don't forget to mix it up and try different varieties of the recipe.

P.S You are welcome.

  2. Add in apples and brown sugar.
  3. Cook 2 to 3 minutes, stirring frequently, until apples are softened.
  4. Add in the cinnamon and golden raisins.
  5. Cook 1 minute more.
